My Weekly Menu: Week 2

Are you struggling to figure out what to eat this week? Now that we are eating all our meals at home plus one thousand snacks a day, a plan is helpful! This week I am going to include breakfast, lunch and dinner. See last week’s post to check out my process to meal planning and my go-to snacks!

Breakfast

I didn’t share breakfast last week! I had a few messages asking what I eat for breakfast, so here is a list of my plan this week:

  • Egg sandwich – I cook one egg in the skillet, top with cheese and eat it on an English muffin. I also use egg whites, cheese on top and serve in an Xtreme Wellness Tortilla like a burrito (linking to show you the tortilla).
  • Yogurt and berries – I eat the Light & Fit Greek yogurt which is high in protein and low in calories. I will add in whatever berries I have on hand.
  • Kodiak frozen waffles – I love the blueberry ones! I top the waffle with butter or peanut butter.

Lunch

For lunch this week, I am planning a salad and sandwich combo. For my salad, I am going to do my easy spinach salad. This easy salad includes spinach, berries, nuts, and feta cheese. I use a raspberry vinaigrette for the dressing (Marie’s is the brand I buy from Kroger).

Easy Spinach Salad

Prep Time 5 mins
Servings 1 person

Ingredients
  

  • 2 cups spinach
  • 1/2 cup berries strawberries, blueberries
  • 2 Tbsp feta cheese crumbles
  • 1 Tbsp chopped nuts walnuts, pecans, almonds
  • 2 Tbsp raspberry vinaigrette store-bought

Instructions
 

  • Place all ingredients in a bowl and top with dressing. If using strawberries, slice before adding to salad.

For my sandwich I am going to make a turkey wrap using the Xtreme Wellness Tortillas, deli turkey, sliced cheese, pickles and honey mustard.

Dinner

  • Lemon Parmesan Poultry with Zucchini and Squash – I am going to serve this over angel hair pasta to complete the meal.
  • Easy Oven Fajitas – This is a go-to meal for us. It is definitely a recipe to keep in the dinner recipe rotation. You can prep it ahead of time and stick it in the fridge! My kids and husband will eat the fajita mixture in tortilla shells. I will eat mine over a bed of lettuce with salsa as my dressing.
  • One-Pan Sausage and Veggies – Sheet pan meals are quick and easy. I love being able to throw everything for dinner on one pan and bake it. You can sub veggies in this meal depending on what your family loves and what you have on hand.

My back-up dinner this week is taco night! I have ground beef in the freezer and a bag of lentils in the cabinet. If you haven’t tried lentil tacos, you should give this recipe a try! It is so good!

Treat of the Week

We are making chocolate pudding with cool whip on top! I have fond memories of my mother making this dessert. She would divide up the pudding in wine glasses before putting it in the fridge to set. Then, top it with cool whip or whip cream right before serving. Everybody gets their own dessert and it feels like a real treat in a fancy glass! I use fat free, sugar free chocolate pudding and cool whip for topping.
