July Recipe Round-up

I got back in the groove in July. I meal planned, found some great recipes and did lots of cooking. It felt good. Real good. I love sharing my recipe finds with you all. I know how it is to think for the millionth time, “What are we having for dinner tonight?” I am trying to make the meal planning process a little easier on you. The majority of the recipes that I share are easy enough for a busy weeknight.

When I meal plan, I usually pick 3 dinners to make for the week. I like to make enough to have leftovers so I am not cooking something new every night. Cooking every single night is not for me. 

Dinner Recipes

  • Crockpot BBQ Chicken — Give me all the Crockpot recipes. Seriously. I love a set it and forget it recipe. This recipe is packed with flavor! I like to serve BBQ chicken with a salad and another vegetable. A bagged salad and a couple cans of green beans makes an easy weeknight meal.
  • Mexican Street Corn Grilled Chicken Tacos — Mexican is by far my favorite cuisine. These tacos were a big hit at my house. I didn’t use the pre-cooked chicken. Instead, I sliced a chicken breast into strips, coated it with about a Tbsp of taco seasoning and pan-seared it until cooked.
  • Instant Pot Lasagna — Admittedly, I haven’t used our instant pot much, but this recipe is a keeper! Quick, easy, and family friendly. I did cut the cheese it called for in half. I think if you put all the cheese in it would have been super cheesy!
  • Garlic Butter Chicken Bites with Asparagus — I shared this recipe on my Instagram and several people LOVED it. I love all things garlic. When a recipe calls for garlic, I usually double what it calls for. I added yellow squash as an extra side & called it a day!
  • Honey Dijon Chicken Foil Packets — This is a recipe you can prep the night before and keep the foil packets in the fridge until you are ready to pop it in the oven. I left off the red pepper flakes for the ones I made for the kids, but other than that, they ate it t

Extras

  • Baked Macaroni and Cheese — OK, next time you want to level up your Mac and Cheese game, here is your recipe. Holy cow, this is GOOD! Surprisingly easy to make, too. Believe me, if I can make it without screwing it up, it’s easy!
  • Honey Mustard Dipping Sauce — I used this sauce on my Chicken Tender Slider recipe in this post! I did add an extra Tbsp of honey for sweetness. If you like honey mustard, you should definitely give this sauce a try!

Meal planning and cooking at home allows me to eat healthy and save money! It is a win-win. Pick a recipe from above and give it a try. Let me know what you think.
