August/September Recipe Round-up

It’s a cold and rainy Sunday morning here in KY and I am trying to plan out our meals for the week. Once a week, I sit down and look at our calendar and plan out meals. I do try to plan out every meal — breakfast, lunch and dinner. From my plan, I make a detailed grocery list. This cuts down on overspending at the grocery and wasting food at the end of the week. 

I typically choose 1 breakfast option, 1 lunch option and 3 dinner meals. My kids are back in school, so I look at the lunch menu on Sunday and see what meals they plan to buy and what meals I need to pack to help with planning. 

To help with my planning this week, I have been referencing my monthly recipe round-up posts. Every month (or 2!) I try to round-up our favorite recipes in one post. These posts are easy to search for and quick to reference if looking for ideas! You can find all the past month’s recipe round-up posts under the “recipe” tab. 

August & September Recipes

  • Roasted Red Pepper Pinwheels — This is a great option for lunch, a snack, dinner on-the-go or an appetizer to watch the football game!
  • Easy Chicken Enchiladas — My easy chicken enchilada recipe is perfect for a quick weeknight meal. I cook the chicken ahead of time in the crock-pot and leave it shredded in the fridge until I am ready to put this meal together.
  • Pork Loin with Carrots and Potatoes — This “recipe” that I shared in my week 3 meal planning post was a big HIT! I will provide a little more detail here. I use a 4 lb pork loin, 1 lb bag of carrots peeled and cut into sticks, 3-4 baking potatoes peeled and cut into wedges and a 16 oz bottle of the Vidalia onion dressing. Cook on low for 8-10 hours. To keep the pork loin moist, I do add about 1/2 bottle of water on top after I pour the dressing over. So, pour the dressing over the top, then fill halfway with water and pour that over top. Salt and pepper to taste.
  • Creamy Chicken Crescent Rolls — The kids really LOVED this meal. This made A LOT of filling, so I did freeze half of it and I am going to try to thaw it out and make it again this week!
  • Just Like Wendy’s Chili — YUM! If you like Wendy’s chili, you will love this recipe! Soup and chili is a great fall meal and perfect to make a large batch and eat for lunches and leftovers.
  • The BEST Side Salad — This salad is so. dang. good. I usually avoid all the chopping and cooking the different ingredients in a salad. If you have been around for a while, you know I am a BIG fan of a salad in a bag, BUT this salad is WORTH all the chopping and cooking. We used Bolthouse Farms Ranch for the dressing. It is called a “side salad”, but I could easily make a meal out of it!
  • Slow Cooker Chicken Taco Soup — Hands down our FAVORITE SOUP EVER. We have been making this recipe for 10+ years. Read the comments for the homemade taco seasoning recipe and use that!
  • Crock-pot Sausage Cheese Tortellini — This is another family favorite meal that we have been making for YEARS! This is not a “set it and forget it meal” even though it is in the crock-pot because it cooks in only 3-4 hours and does require some stirring. It is perfect to make on the weekend or if you are working from home and could step away and stir!
