December Recipe Round-up

Lots of great recipes found in December!

Here’s my top 5:

  1. Chicken Parm Stuffed Peppers — This recipe from Delish was the top recipe in December! A lot of my followers messaged me after making with positive reviews. I made the chicken ahead of time in the crockpot and shredded it. I often prep my protein ahead of time and store in an air-tight glass container in the fridge [like these] until I am ready to use it. This makes putting together recipes much easier after a long day at work. 
  2. Baked Spaghetti — Another great find from Delish. Everybody loves spaghetti, right? I love a baked spaghetti to prep ahead and freeze, cook for a family gathering or to take to a friend who just had a baby. For this recipe I did half spaghetti squash and half regular spaghetti and it turned out delish ;). 
  3. Mexican Chicken Bowls — “Burrito bowls” is always on the dinner recipe rotation in our house. This recipe from Clean Food Crush is very similar to how I make mine! I serve this over regular white rice for my husband and use cauliflower rice for myself. For the kids, I put the mixture in a soft taco shell with cheese! 
  4. Turkey Chili — If you are trying to eat clean, this recipe from Dear Crissy is a great crockpot recipe for you. Ground turkey is a lean meat, usually cheaper, and better for you. Next time I make this, I will use my homemade taco seasoning instead of the seasonings listed to add more flavor. 
  5. Chicken Tortilla-less Soup — This soup from The Real Food Dietitians is a keeper! I have made it several times. For this soup, I also cook my chicken ahead of time, shred it up and store it in the fridge until I am ready. If you cook the chicken ahead of time, just start on step 3 of the recipe instructions.
