Meal Plan Monday: Crockpot Edition

The love of a Crockpot was instilled in me at an early age. As the youngest of four children with two working parents, my mother used the Crockpot frequently for dinners. As a working mom of two, I can definitely appreciate the frequent use of the Crockpot. Who doesn’t love a “set it and forget it” meal? 

I tend to use my Crockpot a lot more frequently in the cooler months. So, as soon as the temperature drops, the Crockpot comes out. I know there are a lot of other trendy kitchen gadgets out there, but I think the Crockpot will always be a kitchen staple in every household. 

I have shared a few of these recipes before and some I will be sharing for the first time, but I wanted to share a meal planning post devoted totally to Crockpot meals! 

Crockpot Recipes

  • Chicken Taco Soup — This recipe is a staple in our house. We have made it for YEARS. I usually make it at least 20 times before winter is over. I highly recommend you check out the comments to make your own taco seasoning for the soup!
  • White Chicken Chili — My version of white chicken chili! Definitely an easy recipe with a lot of flavor. Serve with tortilla chips, cheese quesadillas or corn bread for a meal.
  • Ham and Soup Beans — Here’s an simple, easy and cheap meal that is guaranteed to provide comfort. I always serve it with Jiffy cornbread muffins. Funny, but one of my favorite winter meals.
  • Mississippi Pot Roast — I have been sent this recipe numerous times. Admittedly, I haven’t tried it yet, but I trust my friends, so I am adding it to the list! I hear it is GOOD.
  • Chicken and Dumplings — Another ULTIMATE comfort food. One of my husband’s favorites and easy to make! We haven’t had a recipe off of Delish that we didn’t enjoy.
  • BBQ Chicken — We LOVE this BBQ chicken recipe. The flavor is so good! I have made several different BBQ chicken recipes and this one is my go-to!
  • Drip Beef Sandwiches — This recipe came as a suggestion from a friend, but I haven’t eaten anything from the Pioneer Woman that I didn’t LOVE. I can’t wait to try this one out!
  • Lasagna — I love lasagna, but making it the traditional way is labor intensive. This slow cooker lasagna is so easy! Kid-friendly, too!
  • Easy Potato Soup — This recipe calls for frozen hash browns. No pealing and chopping potatoes required! My sister has made this several times for family events and it is always a crowd-pleaser.

Alright, who’s ready to bust out the Crockpot this week? I will be making the Chicken and Dumplings on Wednesday!
