Meal Planning Week 3

It’s the start to a busy week around here! I’m in a virtual conference all week, so the meal plan is short, contains leftovers and the week will end with frozen pizza for dinner! And guess what? That’s OK!

My husband made pulled pork this weekend on his Traeger grill (more on the grill in a second), and when he first started to cook on this grill, I wondered if he knew how many people were in our family! Each time, he cooks enough for a family of at least 10, not 4! I am all good with leftovers, but I did have to get creative with how to re-purpose all of the pork.

I will side step to the grill for just a second and share what I know. It is a Traeger grill and you can use it as a smoker and a grill. It is really easy to use and I can easily start it and use it myself. My husband rarely asks for a thing, so when he mentioned this grill last summer, I immediately said, “buy it”! The meat is so tender and the grill makes him happy. It is an investment, but well worth it (and I’m not getting paid to say this)!

OK, back to this week’s meal plan. I have 2 recipes and a “real life, give yourself grace, lower your expectations” dinner to share! 

Week 3 Dinners

  • Pulled Pork Tacos with Sweet Chili Slaw — This recipe cooks the pork in the Crockpot, which you can absolutely do. To use this recipe with leftover pork, reheat the pork in a skillet with the seasonings and liquid (beer or water) until heated through. I use the flour “street taco” tortillas to serve. It’s a KEEPER.
  • Slow Cooker Ham and White Beans — Easy and cost effective comfort food. This recipe is so easy to make and if you are on a budget, add it to your list! My husband and I ate this a lot when we were young, dating, paying off student loans and saving for our first house. Now we are older, married, and paying tuition for 2 children. HA! I serve it with good ole Jiffy Corn Muffins. It doesn’t get much better than this on a cold, fall night.

Now, onto the “lower your expectations” dinner, frozen pizzas! It will be my 6-year-old’s favorite dinner of the week. We really love these Simple Truth pizzas from Kroger! 

If you think you have to have a home-cooked meal on the table every night, you don’t. I do think we put too much pressure on ourselves. I am here to tell you to give yourself grace. Always.

    I like those recipes that produce leftover protein that can serve as the basis for a second or even third meal! I cook chicken in the crockpot and shred it. ‘This week I’m planning chicken pot pie and chicken hot brown open face sandwiches. And you are correct! There’s nothing better than Friday night pizza!
