November Dinner Recipe Round-Up

I am not much of a recipe creator; I am more of a recipe finder!

Each week, I search the internet for EASY, HEALTHY recipes that my family will love. I have been sharing links to the recipes on Instagram (@angiebgrubbs) and I have shared these recipes with over 100 people!

I thought the best way to always have access to the recipes I share is to do a monthly round-up of my favorites.

Here’s my top 5 for November:

1. Oven Chicken Fajitas – This recipe from Budget Bytes is always on rotation in our house. I chop up the onions and peppers ahead of time and store them in the fridge in my 1/2 gallon Stasher bag until I am ready to cook this meal. I eat mine over a bed of lettuce and the family eats theirs on tortilla shells. Perfect for leftovers, too!

2. One-Pan Sausage and Veggies – This recipe from Chelsea’s Messy Apron is a solid find! It was a big hit with the entire family and so flavorful. This is another meal that can be easily prepped ahead of time by cutting up the veggies and storing them in the fridge until it is time to cook. For these sheet pan meals, I use a sheet pan similar to this one.

3. Burrito Zucchini Boats – This recipe from Delish is a great one when you are trying to find healthy alternatives to your favorite foods. The only change I made in this recipe was to add our own homemade taco seasoning instead of the seasonings listed.

4. Egg Roll in a Bowl – This recipe from Delish is quick and easy and a hit with the husband (who is sometimes skeptical of my recipe finds). To make it easier for a weeknight meal, I used bagged slaw and it turned out great.

5. Crockpot Chili – Last but certainly not least is this ultimate crockpot chili recipe from Mom On Time Out. Who doesn’t love a crockpot recipe? And, this one does not disappoint! To prep ahead of time, you can cook the beef and sausage and keep it in the fridge until you are ready to pull this together. I omitted the cayenne pepper; I don’t like things too spicy. Don’t have a good crockpot, here is my absolute favorite one.
