October/November Recipe Round-up

When I sat down to write this post and gathered my recipe list from the last few months, I realized I did not really cook much! BUT, what I did cook was delicious. A lot of it can also double as comfort food. This time of year always brings out the comfort food for me!

Without further ado, here are October and November recipes in no particular order. OK, not entirely true – I did put my own recipe at number 1!

Recipe List

  • White Chicken Chili (My own recipe) – This recipe features my favorite way to cook, the Crockpot! It is easy to throw together on a busy morning. The last time I cooked it, I left out the enchilada sauce (because our grocery has been out of if for months) and it turned out just fine! I like to serve it with cornbread or tortilla chips.
  • Chicken Jambalaya – My husband is a BIG jambalaya fan. I tolerate it for him, but without seafood! Here is a recipe if you are a fan, too!
  • Easy Crockpot Chicken and Dumplings – Absolute YES to this chicken and dumplings recipe. I have made several over the years (another favorite of the husband) and this one is my favorite!
  • Meatless Chili Mac – Do you ever do “meatless Monday”? I actually did a meatless Lent this year. Truth is, I could do without meat and be just fine. I do like to serve some meals without meat. This recipe is a good meatless option!
  • Banana Bread – Alright, I am back to that part of Q where I bake all the banana bread. This recipe is our favorite! I swap out the oil and use applesauce. My milk of choice is unsweetened almond milk. I also double the cinnamon!
  • Brussel Sprouts and Kale Salad – I made a version of this salad for Thanksgiving (I left out the Brussels sprouts and added pecans). This salad is a KEEPER!
  • The Hot Brown – I saved the best for last! I shared this on my Instagram, but every year, my mother makes hot browns with the left-over turkey from Thanksgiving. I had to carry on the tradition at home this year (thanks, COVID) and made my own. They turned out so good and my 6-year-old asked if we could eat them every night! As a KY girl, I did use the original recipe from The Brown Hotel. If you have never had a hot brown, try this recipe and thank me later!

    Is that the University of Kentucky Cooperative Extension cookbook you are holding? It’s a wonderful book full of good recipes and other tips for healthy living!
