May & June Recipe Round-up

To be honest, I didn’t have much of a meal plan for May and June, but I did manage to cook some yummy recipes that are worth sharing. 

We love to cook and try out new recipes. This experience has been nice to slow down and actually cook. Silver linings, friends. Always. 

Recipes

  1. Veggie Kabobs — I enjoy eating meatless and finding some delicious vegetarian recipes. This recipe was in the Kroger magazine and it is delicious! 
  2. Frittata — You cannot go wrong with any Ree Drummond recipes! My mom gifted the girls in my family one of Ree’s cookbooks a few Christmases ago and it is one of my favorites. A frittata is such a versatile recipe. Eat it for breakfast, lunch or dinner. Toss in whatever leftover veggies you have. Give this recipe a try. You will not be disappointed!
  3. Chicken and Rice Casserole — I love a good Campbell’s recipe. My husband and I received a Campbell’s cookbook for a wedding gift. It was the perfect gift for a new wife that hardly ever cooked! The recipes are simple and call for only a handful of ingredients. I love a good casserole. Toss it together and throw it in the oven for an easy weeknight meal. 
  4. Lentil Sloppy Joes — My love for lentils began when I went meatless for Lent. I had never even eaten them before then. This recipe was featured on a weekend episode of The Kitchen. My husband immediately looked up the recipe! My 6-year-old said they were delicious. The recipe made enough for 4 dinners for us. I froze half of the mixture and we ate it at a later time. It froze really well!
