Meal Planning Week 3: Dinner Only Edition

Alright, friends, I am back on the meal planning train. Honestly, it makes my life a lot easier if I plan out our meals based on our schedule. Meal planning also saves money and reduces waste. Win, win! 

This week, I am sharing with you 4 dinners that we are eating this week! The weather is cooling down here in KY, so I am including a chili recipe. Cooler weather = chili, right? I’m also sharing the easiest “set it and forget it” meal. 

Let’s get right to it. I am including pictures of some of the ingredients for the dinners. Please note, these pictures are not all inclusive, but the grocery list at the end is! Here’s what’s on the menu this week:

Dinner 1

Every meal doesn’t have to be a gourmet meal, friends! I have shared this salad recipe before, but if you haven’t tried it, you MUST! It is a salad I make on the weekends when I have the time to chop the veggies, cook the bacon and boil the eggs. I use Bolthouse Farms Ranch for the dressing!

Dinner 2

I had some leftover homemade cream of chicken soup [homemade recipe HERE] in the fridge I am needing to use but didn’t want to cook another casserole. These are the perfect solution. Add a few veggies and you have a meal! And in case you didn’t know, all of your veggies don’t have to be fresh. Frozen veggies are a great option, too. Watch the seasoning and sauces when buying frozen veggies.

Dinner 3

  • Pork loin
  • Carrots
  • Potatoes

This is one of our favorite “set it and forget it” meals. I will trim the fat off of the pork before placing it in the Crockpot. Peal and cut up the carrots and potatoes and place around and on top of the pork. Then, pour the vidalia onion dressing all over. Cook on low for 8-10 hours.  

Dinner 4

As soon as the weather starts to cool down, I am ready for chili! It makes for great leftovers, too.
