February Recipe Round-up

February recipes include a little bit of everything!

1. Chicken Cordon Bleu — If you do not know Living with Landyn, I am happy to introduce you to the absolute best. She is one of my favorite Instagram follows. This recipe is easy and delicious, which makes for a perfect week-night meal! LWL gets the busy mom. 

2. Sausage and Peppers Stuffed Spaghetti Squash — I have really grown to love spaghetti squash. I actually prefer it to spaghetti. Any recipe that includes the crock-pot is a win in my book! I bake the spaghetti squash ahead of time and keep in the rind in an airtight container until ready to eat. 

3. Kale and Brussels Sprout Salad — You know what I say, eat a salad a day! The dressing in this salad recipe is to die for AND you likely have all the ingredients in your pantry. I also made this salad with and without the Brussels sprouts and loved it both ways!

4. Banana Bread — We all have bananas that are too ripe to eat, but we don’t want to throw them away. I usually do one of two things with my too-ripe bananas. I either freeze the bananas for smoothies or make banana bread. This banana bread recipe is the best I have ever had. I used applesauce instead of oil to cut the fats and unsweetened almond milk as my milk of choice. Huge win in my house! We have made this recipe several times. 

5. Mini Applesauce Muffins — Are you a mom of a young child? This recipe is for you! My 5-year-old and 3-year-old approve! My kids love the mini muffins in the package. I am always looking for a healthier, cheaper alternative. These muffins are the perfect fix.
