March & April Recipe Round-Up

All meatless recipes in this round-up! Am I a vegetarian? Nope, but I did go meatless for Lent. Truth is, I actually enjoyed it. I’m really not a big meat eater. I enjoy meatless meals, getting creative, and finding other sources of protein. I hear meat may be getting expensive soon, so these recipes may come in handy for you too! 

Dinner Recipes

  • Tofu Stir Fry — I had never eaten tofu before making this recipe. I did a lot of reading about tofu and found out to buy the “extra firm” or “super firm” variety. Do not make the mistake of buying the soft kind to cook with — that is meant for sauces and smoothies. This recipe is a KEEPER! We actually had it for dinner again last night! What surprised me most of all, my husband loves it too.
  • Vegetarian Ramen — Level up ramen noodles with this delicious recipe.
  • Lentil Tacos — This is an instant pot recipe and I have made these several times. Serve on nachos, on a salad or in tortilla shells. Any way that you would serve ground beef on taco night, you can sub with lentils. Quick, easy, cheap and delicious.
  • One-pot Enchilada Pasta — I love a one-pot meal. Makes cooking and clean up much easier! My family is not a fan of chickpea pasta, so I did use regular pasta. If you need gluten-free, go for the chickpea pasta.
  • Vegetarian Chili — I love a good chili recipe. Leaving out the meat did not sacrifice any flavor. We have made this several times since March and changed up the beans in the soup depending on what we have in the pantry.
  • Baked Rigatoni — A baked pasta dish is an easy family, weeknight meal. I love the chance to add spinach in to our diet and pasta is the perfect way! This veggie-lovers baked rigatoni is so good. I did add yellow squash and Italian seasoning. I also only used half of the cheese.

Snack Recipes

I have been looking for recipes that are kid friendly to make at home. My kids love to help cook and I love to involve them in the kitchen. Here are a few recipes we have made in the last few weeks.

  • Yogurt Bark — My sister shared this recipe with me and it is delicious! Kid-approved too! I used nonfat, plain Greek yogurt for this recipe and it worked great. I do think a vanilla-flavored yogurt would be really good. I didn’t have granola, so I chopped up raw almonds for the topping.
  • Granola Bars — My kids could eat an entire box of store-bought granola bars in a day. I searched and searched for a recipe that included ingredients I already had on hand! I did not put almonds in it, but we did add semi-sweet chocolate chips!

Kitchen Gadgets

I am going to start including a list of kitchen gadgets that we love in my recipe posts from Target! These are the things that I used to cook these recipes and store for later! I am a Target affiliate and earn a small percentage when you purchase using my links.

  • Instant Pot — Admittedly, I do not use my Instant Pot enough. It cooks things so quick, I need to start using it more!
  • Skillet with lid — My parents bought us a Cuisinart skillet with a lid for Christmas and we love it. This isn’t the exact one, but very similar. I love these large skillets with a lid for a one-pot meal or stir fry.
  • Casserole dish — I love the baking dishes with a lid. Easy clean up! I just put the lid on and put the leftovers in the fridge. These dishes also make for easy prep. Prep ahead of time, stick it in the fridge and pull it out when ready to bake.
